Ingredients
- 1 jar of grape leaves
- 1 cup cooked brown rice
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/2 cup finely chopped onion
- 1/4 cup olive oil
- 1/4 cup freshly squeezed lemon juice
- Salt and pepper to taste
Directions
- Drain the grape leaves and rinse them under cold water. Set aside.
- In a large bowl, mix together the cooked brown rice, crumbled feta cheese, chopped fresh herbs, chopped onion, olive oil, lemon juice, salt and pepper.
- Divide the mixture among the grape leaves and roll them up, like a burrito.
- Place the rolls on a baking sheet and bake in a preheated 375°F oven for 15 minutes.
- Serve warm or at room temperature.
