Ingredients

  • 1 jar of grape leaves
  • 1 cup cooked brown rice
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/2 cup finely chopped onion
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • Salt and pepper to taste

Directions

  1. Drain the grape leaves and rinse them under cold water. Set aside.
  2. In a large bowl, mix together the cooked brown rice, crumbled feta cheese, chopped fresh herbs, chopped onion, olive oil, lemon juice, salt and pepper.
  3. Divide the mixture among the grape leaves and roll them up, like a burrito.
  4. Place the rolls on a baking sheet and bake in a preheated 375°F oven for 15 minutes.
  5. Serve warm or at room temperature.
