Ingredients
- 1 lb ground bison
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeno pepper, diced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 2 tablespoons tomato paste
- 1 (14.5-ounce) can diced tomatoes
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 cup vegetable broth
- Salt and pepper, to taste
Directions
- In a large pot or Dutch oven over medium heat, cook the bison and onion until the meat is cooked through and the onion is softened, about 8 minutes.
- Add the garlic, bell pepper, jalapeno pepper, chili powder, cumin, and oregano and cook for another 2 minutes.
- Stir in the tomato paste and diced tomatoes, and cook for 5 minutes more.
- Add the beans, broth, salt, and pepper and bring the chili to a simmer. Reduce the heat to low, cover, and simmer for 20 minutes.
- Serve the chili with your favorite toppings and enjoy!
