Ingredients

  • 1 lb ground bison
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeno pepper, diced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 tablespoons tomato paste
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 cup vegetable broth
  • Salt and pepper, to taste

Directions

  1. In a large pot or Dutch oven over medium heat, cook the bison and onion until the meat is cooked through and the onion is softened, about 8 minutes.
  2. Add the garlic, bell pepper, jalapeno pepper, chili powder, cumin, and oregano and cook for another 2 minutes.
  3. Stir in the tomato paste and diced tomatoes, and cook for 5 minutes more.
  4. Add the beans, broth, salt, and pepper and bring the chili to a simmer. Reduce the heat to low, cover, and simmer for 20 minutes.
  5. Serve the chili with your favorite toppings and enjoy!
