Ingredients

  • 3 slices of bacon, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 2 cans of black beans, rinsed and drained
  • 2 cups of chicken broth
  • 1 can of diced tomatoes, undrained
  • 1 teaspoon of cumin
  • 1 teaspoon of oregano
  • Salt and pepper to taste
    • Directions

      1. In a large pot over medium heat, cook the bacon until crisp. Remove the bacon and set aside, leaving the drippings in the pot.
      2. Add the onion, garlic, and jalapeno to the pot and sauté for 5 minutes, or until the onion is translucent.
      3. Add the black beans, chicken broth, tomatoes, cumin, oregano, salt, and pepper. Stir to combine.
      4. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes.
      5. Stir in the bacon and serve.
