Ingredients

  • 1¼ cup all-purpose flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons poppy seeds
  • 1 teaspoon lemon zest
  • ¼ cup vegetable oil
  • 1 large egg
  • ¾ cup milk
  • 2 tablespoons freshly-squeezed lemon juice
  • Powdered sugar, for dusting

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, poppy seeds, and lemon zest.
  3. In a separate bowl, whisk together the oil, egg, milk, and lemon juice.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Pour the batter into a greased 9-inch round cake pan.
  6. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Dust with powdered sugar before serving.
