Ingredients
- 1¼ cup all-purpose flour
- ½ cup sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 tablespoons poppy seeds
- 1 teaspoon lemon zest
- ¼ cup vegetable oil
- 1 large egg
- ¾ cup milk
- 2 tablespoons freshly-squeezed lemon juice
- Powdered sugar, for dusting
Directions
- Preheat oven to 350°F.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, poppy seeds, and lemon zest.
- In a separate bowl, whisk together the oil, egg, milk, and lemon juice.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Pour the batter into a greased 9-inch round cake pan.
- Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar before serving.
