Ingredients

Directions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, combine the gluten-free all-purpose flour, almond flour, dark cocoa powder, baking powder, baking soda, and salt.
  3. In a separate mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Add the dry ingredients to the wet ingredients in three separate additions, alternating with the buttermilk. Begin and end with the dry ingredients.
  6. Pour in the hot water and mix until the batter is smooth and well combined.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove the cupcakes from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  10. For the ganache, place the chopped dark chocolate in a heatproof bowl.
  11. In a small saucepan, heat the heavy cream and butter over medium heat until it just begins to simmer.
  12. Pour the hot cream mixture over the chopped chocolate and let it sit for 1-2 minutes.
  13. Stir the ganache until smooth and well combined.
  14. Let the ganache cool slightly until it thickens to a spreadable consistency.
  15. Once the cupcakes are cooled, spread or pipe the ganache on top of each cupcake.
  16. Allow the ganache to set before serving.
