Ingredients

  • 2 boneless, skinless chicken breasts, cut into thin strips
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 slices of bread
  • 1 cup shredded cheddar cheese
  • 1/4 cup sliced jalapeños (optional)
  • Salsa or sour cream for serving

Directions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the chicken strips to the skillet and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the sliced peppers and onions. Sauté until they are tender and slightly charred, about 5-7 minutes.
  4. Return the cooked chicken strips to the skillet with the peppers and onions. Sprinkle with chili powder, cumin, paprika, garlic powder, salt, and black pepper. Mix well to coat everything evenly.
  5. Preheat the oven to 400°F (200°C).
  6. Place two slices of bread on a baking sheet. Top each slice with a portion of the chicken and pepper mixture. Sprinkle with shredded cheddar cheese and sliced jalapeños if desired. Place another slice of bread on top of each melt to cover.
  7. Bake in the preheated oven for 5-8 minutes, or until the cheese is melted and the bread is toasted.
  8. Remove from the oven and let it cool for a couple of minutes. Slice each melt in half diagonally.
