Ingredients

  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and black pepper to taste

Directions

  1. In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove bacon from the pot and set aside, leaving the bacon grease in the pot.
  2. In the same pot, add the ground beef, ground pork, ground chicken, and chorizo sausage. Cook over medium heat until browned and cooked through, breaking up the meat into small crumbles.
  3. Add the chopped onion, minced garlic, and habanero peppers to the pot. Cook for an additional 5 minutes, or until the onion is translucent and fragrant.
  4. Stir in the cooked bacon, kidney beans, black beans, diced tomatoes, tomato paste, beef broth, chili powder, cumin, paprika, oregano, salt, and black pepper.
  5. Bring the chili to a simmer and let it cook for at least 20 minutes to allow the flavors to meld together. Stir occasionally to prevent sticking.
  6. Taste the chili and adjust the seasoning if needed. If you prefer a spicier chili, you can add more chili powder or diced habanero peppers.
