Ingredients
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 teaspoons curry powder
- 1 teaspoon ground ginger
- 1/2 teaspoon ground turmeric
- 1 red pepper, diced
- 2 cups cooked white rice
- 2 (5-ounce) cans tuna, drained
- 1 (14.5-ounce) can diced tomatoes
- 1 cup frozen peas
- 1/2 cup light cream or half-and-half
- 1/4 cup shredded cheddar cheese
Directions
- Preheat oven to 350°F.
- Heat oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add curry powder, ginger, and turmeric and cook for 1 minute.
- Add red pepper and cook for 2 minutes.
- Add cooked rice, tuna, diced tomatoes, and peas and stir to combine.
- Add cream and stir to combine. Cook for 2 minutes.
- Spread the mixture into a 9-inch baking dish and top with cheese.
- Bake for 20 minutes, until cheese is melted and bubbly.
