Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1 red pepper, diced
  • 2 cups cooked white rice
  • 2 (5-ounce) cans tuna, drained
  • 1 (14.5-ounce) can diced tomatoes
  • 1 cup frozen peas
  • 1/2 cup light cream or half-and-half
  • 1/4 cup shredded cheddar cheese

Directions

  1. Preheat oven to 350°F.
  2. Heat oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add curry powder, ginger, and turmeric and cook for 1 minute.
  4. Add red pepper and cook for 2 minutes.
  5. Add cooked rice, tuna, diced tomatoes, and peas and stir to combine.
  6. Add cream and stir to combine. Cook for 2 minutes.
  7. Spread the mixture into a 9-inch baking dish and top with cheese.
  8. Bake for 20 minutes, until cheese is melted and bubbly.
  9. Serve hot and enjoy!
