Ingredients
- 1/2 cup coconut oil, melted
- 1/2 cup granulated sugar
- 1/3 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Directions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, combine melted coconut oil, granulated sugar, and brown sugar. Mix until combined.
- Add in egg and vanilla extract. Mix until combined.
- Add in flour, baking soda, and salt. Mix until combined.
- Using a cookie scoop or a spoon, scoop out dough and roll into 1-inch balls. Place on prepared baking sheets.
- Bake for 8-10 minutes or until edges are lightly golden brown. Allow to cool on baking sheet for 5 minutes before transferring to a cooling rack.
