Ingredients
- 3 medium beets, peeled and cut into 2-inch cubes
- 1 small onion, thinly sliced

Directions
- Preheat oven to 375 degrees Fahrenheit.
- In a large bowl, toss together the beets, onion, olive oil, salt, and pepper. Spread the mixture onto a baking sheet and roast for 25-30 minutes, stirring once, until the beets are tender.
- In a small bowl, whisk together the vinegar, honey, and mustard. Set aside.
- In a large bowl, combine the roasted beets and onions with the feta cheese and parsley. Drizzle with the vinaigrette and toss to combine.
