Ingredients
- 4 tablespoons butter
- 1 onion, chopped
- 4 cups chicken broth
- 2 cups broccoli florets
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
Directions
- In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the chicken broth and broccoli florets and bring to a boil. Reduce heat and simmer for 10 minutes.
- Add the heavy cream, cheddar cheese, garlic powder, salt and pepper and stir until the cheese is melted. Simmer for an additional 5 minutes.
- Serve the soup with additional cheddar cheese, if desired.
