Ingredients

  • 1 cup of all-purpose flour
  • 1 teaspoon of sea salt
  • 2 eggs
  • 2 tablespoons of olive oil
  • 1 pinch of saffron threads
  • 1/4 cup of warm water
    • Directions

      1. In a large bowl, mix together the flour and salt.
      2. In a separate bowl, whisk together the eggs, olive oil, saffron, and warm water.
      3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
      4. Turn the dough out onto a floured work surface and knead for 5 minutes, or until the dough is smooth and elastic.
      5. Wrap the dough in plastic wrap and let it rest for 30 minutes.
      6. Cut the dough into 4 pieces and roll out each piece into a thin sheet.
      7. Using a pasta machine, roll the dough through the machine on the widest setting. Continue rolling the dough through the machine, adjusting the setting thinner each time, until the desired thickness is achieved.
      8. Cut the dough into desired shapes and cook in boiling water for 2 minutes.
      9. Drain the cooked pasta and serve with your favorite sauce.
