Ingredients
- 1 pound chicken breasts, sliced into thin strips
- 2 tablespoons olive oil, divided
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups mixed greens
- 1 red bell pepper, thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Your favorite salad dressing
Directions
- In a large bowl, combine chicken strips, 1 tablespoon olive oil, garlic, cumin, paprika, and salt and pepper. Mix until chicken is evenly coated.
- Heat the remaining olive oil in a large skillet over medium high heat. Add chicken and cook, stirring occasionally, until chicken is cooked through, about 5 minutes.
- In a large bowl, combine mixed greens, bell pepper, red onion, olives, feta cheese, tomatoes, and cilantro. Toss to combine.
- In a small bowl, whisk together red wine vinegar, olive oil, honey, lime juice, cumin, and salt and pepper. Pour over salad and mix until evenly coated.
- Add cooked chicken to salad and mix until evenly distributed.
- Serve with your favorite salad dressing.
