Ingredients

  • 4 boneless chicken breasts, pounded thin
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, chopped
  • 1 tablespoon oregano
  • 1 tablespoon thyme
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped

Directions

  1. Preheat oven to 375 degrees F.
  2. In a small bowl, combine feta cheese, olives, oregano, thyme, and a pinch of salt and pepper. Mix until combined.
  3. Take each chicken breast and spoon the feta cheese mixture onto the chicken, spreading it out evenly. Roll the chicken breast up, tucking in the sides to make sure the filling is secure.
  4. In a medium skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for 5 minutes on each side, or until golden brown.
  5. Transfer the chicken to a baking dish and bake for 20 minutes, or until the chicken is cooked through.
  6. In a small bowl, whisk together the lemon juice, olive oil, and a pinch of salt and pepper. Pour the sauce over the chicken and bake for an additional 5 minutes.
  7. Top with fresh parsley and serve.
