Ingredients
- 1/4 cup olive oil
- 1/4 cup freshly squeezed lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 pound beef sirloin, cut into 1-inch cubes
- 2 medium zucchini, cut into 1-inch cubes
- 1 red onion, cut into 1-inch cubes
Directions
- In a large bowl, whisk together the olive oil, lime juice, garlic, cumin, oregano, smoked paprika, salt, and pepper.
- Add the beef cubes, zucchini cubes, and onion cubes and stir to coat. Cover and marinate in the refrigerator for 30 minutes.
- Preheat your grill to medium-high heat.
- Thread the beef, zucchini, and onion cubes onto skewers. Discard the marinade.
- Grill the kebabs for 8-10 minutes, turning once, until the beef is cooked through and the vegetables are tender.
- Serve hot with mojo sauce.
