Ingredients

  • 1 bunch kale, stems removed and chopped
  • 1 bunch Swiss chard, stems removed and chopped
  • 1 cup garlic scapes, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 can white beans, drained and rinsed
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Olive oil for cooking

Directions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are softened.
  2. Add kale, chard, and garlic scapes to the pot. Cook for 5 minutes until greens are wilted.
  3. Pour in vegetable broth and diced tomatoes. Bring soup to a boil, then simmer for 20 minutes.
  4. Add white beans, dried thyme, salt, and pepper to the pot. Cook for an additional 5 minutes.
