Ingredients
- 1 bunch kale, stems removed and chopped
- 1 bunch Swiss chard, stems removed and chopped
- 1 cup garlic scapes, chopped
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 can white beans, drained and rinsed
- 1 tsp dried thyme
- Salt and pepper to taste

Directions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are softened.
