Ingredients
- 1 9-inch unbaked pie crust
- 2 cups fresh rhubarb, diced
- 1 cup white sugar
- 1/4 cup all-purpose flour
- 2 eggs
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup packed brown sugar
- 1/3 cup all-purpose flour
- 1/4 cup quick-cooking oats

Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine rhubarb, white sugar and 1/4 cup flour. Place mixture in the unbaked pie crust.
- In a separate bowl, beat eggs slightly. Stir in melted butter, vanilla, and brown sugar. Blend in 1/3 cup flour, oats, and cinnamon. Spread over rhubarb layer.
- Bake in preheated oven for 40 to 50 minutes, or until top is golden brown and filling is set.
