Ingredients

  • 1 9-inch unbaked pie crust
  • 2 cups fresh rhubarb, diced
  • 1 cup white sugar
  • 1/4 cup all-purpose flour
  • 2 eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup quick-cooking oats
  • 1/4 teaspoon ground cinnamon

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, combine rhubarb, white sugar and 1/4 cup flour. Place mixture in the unbaked pie crust.
  3. In a separate bowl, beat eggs slightly. Stir in melted butter, vanilla, and brown sugar. Blend in 1/3 cup flour, oats, and cinnamon. Spread over rhubarb layer.
  4. Bake in preheated oven for 40 to 50 minutes, or until top is golden brown and filling is set.
