Indian-Curried Barley Pilaf

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper, or to taste
  • 1/2 cup dried red lentils
  • 1 cup uncooked pearl barley
  • 4 cups vegetable broth
  • 1/2 cup frozen peas
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Stir in the cumin, coriander, turmeric, garam masala, and cayenne pepper. Sauté for 1 minute.
  3. Add the lentils, barley, and vegetable broth and stir to combine. Increase the heat to high and bring to a boil. Reduce the heat to low, cover, and simmer for 30 minutes.
  4. Stir in the frozen peas. Cover and simmer for an additional 5 minutes, or until the barley is tender.
  5. Season with salt and pepper, to taste.
  6. Serve warm.
