Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 1/2 teaspoon cayenne pepper, or to taste
- 1/2 cup dried red lentils
- 1 cup uncooked pearl barley
- 4 cups vegetable broth
- 1/2 cup frozen peas
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
- Stir in the cumin, coriander, turmeric, garam masala, and cayenne pepper. Sauté for 1 minute.
- Add the lentils, barley, and vegetable broth and stir to combine. Increase the heat to high and bring to a boil. Reduce the heat to low, cover, and simmer for 30 minutes.
- Stir in the frozen peas. Cover and simmer for an additional 5 minutes, or until the barley is tender.
- Season with salt and pepper, to taste.
- Serve warm.
