Ingredients

  • 1 large eggplant, sliced into 1/2-inch thick rounds
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 cup bread crumbs
  • 1/4 cup melted butter
  • 1/4 cup grated Parmesan cheese

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with olive oil.
  2. In a shallow dish, mix together the flour, salt, and pepper. Dip the eggplant slices into the flour mixture and shake off the excess.
  3. Heat the olive oil in a large skillet over medium-high heat. Fry the eggplant slices in the hot oil until golden brown on both sides, about 5 minutes per side.
  4. Transfer the eggplant slices to the prepared baking dish. Sprinkle with the Parmesan cheese and parsley.
  5. In a small bowl, mix together the bread crumbs, melted butter, and remaining Parmesan cheese. Sprinkle the crumb mixture over the eggplant slices.
  6. Bake in the preheated oven until the topping is golden brown and the eggplant is tender, about 20 minutes.
