Ingredients
- 1 large eggplant, sliced into 1/2-inch thick rounds
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil
- 1/2 cup grated Parmesan cheese

- 1/2 cup bread crumbs
- 1/4 cup melted butter
- 1/4 cup grated Parmesan cheese
Directions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with olive oil.
- In a shallow dish, mix together the flour, salt, and pepper. Dip the eggplant slices into the flour mixture and shake off the excess.
- Heat the olive oil in a large skillet over medium-high heat. Fry the eggplant slices in the hot oil until golden brown on both sides, about 5 minutes per side.
- Transfer the eggplant slices to the prepared baking dish. Sprinkle with the Parmesan cheese and parsley.
- In a small bowl, mix together the bread crumbs, melted butter, and remaining Parmesan cheese. Sprinkle the crumb mixture over the eggplant slices.
- Bake in the preheated oven until the topping is golden brown and the eggplant is tender, about 20 minutes.
