This easy recipe takes ripe avocados, slices them, coats them in a crispy breadcrumb coating, and then fries them until golden brown. Ingredients

  • 2 ripe avocados
  • 1 cup breadcrumbs
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 2 eggs, beaten
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 chipotle pepper in adobo sauce, minced
  • 1/2 teaspoon adobo sauce (from the can of chipotle peppers)
  • 1/4 teaspoon salt

Directions

  1. Slice the avocados in half and remove the pits. Slice each avocado half into 4-5 long slices.
  2. In a shallow dish, combine the breadcrumbs, flour, salt, paprika, and garlic powder.
  3. In another shallow dish, beat the eggs.
  4. Dip each avocado slice into the beaten eggs, allowing any excess to drip off, then coat in the breadcrumb mixture, pressing gently to adhere.
  5. Place the coated avocado slices on a plate or baking sheet and chill in the refrigerator for 15 minutes.
  6. In a large skillet, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).
