Enjoy the delightful combination of crispy okra with aromatic spices and herbs in this Indian-inspired dish. The okra is lightly coated in a flavorful mixture and then quickly fried to achieve a crunchy texture. Serve it as a side dish or a snack, and savor the burst of flavors with every bite.

Ingredients

  • 1 pound okra
  • 1/2 cup chickpea flour
  • 2 tablespoons rice flour
  • 1 teaspoon chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chaat masala (optional)
  • Oil for frying
  • Fresh cilantro for garnish

Directions

  1. Wash the okra thoroughly and pat dry with a kitchen towel. Trim the ends and cut the okra into 1-inch pieces.
  2. In a mixing bowl, combine chickpea flour, rice flour, chili powder, coriander powder, turmeric powder, cumin powder, garam masala, salt, black pepper, and chaat masala (if using). Mix well.
  3. Add the cut okra into the bowl and gently toss to coat the pieces with the flour mixture. Ensure that the okra is evenly coated.
  4. Heat oil in a deep frying pan or skillet over medium heat. Once the oil is hot, carefully add a handful of the coated okra pieces, ensuring they are not too crowded in the pan.
  5. Fry the okra for about 3-4 minutes, stirring occasionally, until they turn golden brown and crispy. Remove the fried okra with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil.
  6. Repeat the frying process with the remaining coated okra pieces.
  7. Garnish the crispy Indian okra with fresh cilantro leaves and serve hot.
  8. Enjoy the crispy Indian okra as a side dish or a snack!
