- Cream Cheese Frosting:
- 1/2 cup unsalted butter, softened
- 8 ounces cream cheese, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract

- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- Add the vegetable oil and the eggs to the dry ingredients. Mix until well combined.
- Fold in the grated carrots, crushed pineapple, chopped walnuts, and shredded coconut.
