Ingredients

  • 3 cups all-purpose flour

  • 1/4 cup unsalted butter, melted

  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1 cup jelly of your choice

Directions

  1. In a mixing bowl, combine the flour, sugar, and salt. Mix well.
  2. In a separate bowl, dissolve the yeast in warm milk and let it sit for 5 minutes until foamy.
  3. Add the yeast mixture, melted butter, eggs, and vanilla extract to the dry ingredients. Mix until a dough forms.
  4. Transfer the dough to a floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl and cover with a kitchen towel. Let it rise in a warm place for 1 hour or until doubled in size.
  6. Punch down the dough and roll it out into a 1/4 inch thickness.
  7. Using a round cookie cutter or a glass, cut out circles from the dough.
  8. Place a teaspoon of jelly in the center of half of the dough circles.
  9. Cover each jelly-filled circle with another dough circle and pinch the edges to seal.
  10. Place the filled doughnuts on a baking sheet and let them rise for another 30 minutes.
  11. Heat vegetable oil in a deep pot or skillet until it reaches 350°F (180°C).
  12. Carefully fry the doughnuts in batches for 2-3 minutes on each side until golden brown.
  13. Remove the fried doughnuts from the oil and let them drain on a paper towel.
  14. Dust the cooled doughnuts with powdered sugar before serving.
