Directions

  1. Prepare a 9x9-inch (23x23cm) baking pan by lining it with parchment paper and greasing it with butter or cooking spray.
  2. In a large saucepan over medium heat, melt the butter.
  3. Add the brown sugar and corn syrup to the saucepan and stir continuously until the mixture comes to a boil.
  4. Reduce the heat to low and gradually add the sweetened condensed milk, stirring constantly to combine.
  5. Continue cooking the mixture over low heat, stirring frequently, until it reaches the soft ball stage on a candy thermometer (235-240°F or 113-116°C).
  6. Remove the saucepan from the heat and stir in the vanilla extract.
  7. Pour the caramel mixture into the prepared baking pan and allow it to cool and set completely at room temperature.
  8. Once the caramel has cooled and set, remove it from the pan by lifting the parchment paper.
  9. Cut the caramel into small squares or rectangles.
  10. Wrap each piece of caramel in wax paper or cellophane, twisting the ends to secure.
  11. Store the chewy caramels in an airtight container at room temperature.
