Ingredients

  • 4 large eggs
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced red onion
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Directions

  1. Place the eggs in a saucepan and cover them with water. Bring the water to a boil over high heat.
  2. Once boiling, remove the saucepan from heat and let the eggs sit in the hot water for 10 minutes.
  3. While the eggs are boiling, prepare an ice bath by filling a large bowl with ice and water.
  4. After 10 minutes, carefully transfer the eggs to the ice bath and let them cool for 5 minutes.
  5. Peel the eggs and chop them into small pieces.
  6. In a mixing bowl, combine the chopped eggs, mayonnaise, mustard, diced red and green bell peppers, diced red onion, chopped parsley, salt, and pepper.
  7. Stir well until all the ingredients are evenly coated.
