Ingredients

  • 2 tablespoons of olive oil
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of dried oregano
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 cans of black beans, drained and rinsed
  • 4 cups of vegetable broth
  • 1/2 cup of sour cream
  • 1/2 cup of chopped fresh cilantro

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  3. Stir in the cumin, chili powder, oregano, salt, and pepper. Cook for 1 minute.
  4. Add the black beans and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.
  5. Remove the pot from the heat and stir in the sour cream and cilantro. Serve warm.
