Ingredients
- 2 tablespoons of olive oil
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 cans of black beans, drained and rinsed
- 4 cups of vegetable broth
- 1/2 cup of sour cream
- 1/2 cup of chopped fresh cilantro
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is softened, about 5 minutes.
- Stir in the cumin, chili powder, oregano, salt, and pepper. Cook for 1 minute.
- Add the black beans and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.
- Remove the pot from the heat and stir in the sour cream and cilantro. Serve warm.
