Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and diced
- 1 pound ground turkey
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (14.5-ounce) can diced tomatoes
- 1 (15-ounce) can pinto beans, rinsed and drained
- 1 cup chicken broth
Directions
- Heat the oil in a large pot over medium-high heat. Add the onion and garlic and cook until they are softened, about 3 minutes.
- Add the bell pepper and jalapeno pepper and cook for 2 minutes more.
- Add the ground turkey, chili powder, cumin, oregano, salt, and pepper. Cook until the turkey is cooked through, about 8 minutes.
- Stir in the diced tomatoes, pinto beans, and chicken broth. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes. Serve hot.
