Ingredients

  • 1 block of extra-firm tofu
  • 2 tablespoons of sesame oil
  • 2 cloves of garlic, minced
  • 1/4 cup of low-sodium soy sauce
  • 1 teaspoon of fresh ginger, minced
  • 1 tablespoon of rice vinegar
  • 1 cup of broccoli florets
  • 1 red bell pepper, sliced
  • 1/2 cup of snow peas
  • 2 green onions, sliced
  • 1/4 cup of chopped cilantro

Directions

  1. Drain and press the tofu for 15 minutes. Cut into cubes.
  2. Heat the sesame oil in a large skillet over medium-high heat. Add the tofu and cook for 5 minutes, stirring occasionally.
  3. Add the garlic, soy sauce, ginger, and rice vinegar. Cook for 1 minute.
  4. Add the broccoli, bell pepper, and snow peas. Cook for 5 minutes, stirring occasionally.
  5. Add the green onions and cilantro. Cook for 2 minutes, stirring occasionally.
  6. Serve and enjoy!
