Ingredients
- 1 block of extra-firm tofu
- 2 tablespoons of sesame oil
- 2 cloves of garlic, minced
- 1/4 cup of low-sodium soy sauce
- 1 teaspoon of fresh ginger, minced
- 1 tablespoon of rice vinegar
- 1 cup of broccoli florets
- 1 red bell pepper, sliced
- 1/2 cup of snow peas
- 2 green onions, sliced
- 1/4 cup of chopped cilantro
Directions
- Drain and press the tofu for 15 minutes. Cut into cubes.
- Heat the sesame oil in a large skillet over medium-high heat. Add the tofu and cook for 5 minutes, stirring occasionally.
- Add the garlic, soy sauce, ginger, and rice vinegar. Cook for 1 minute.
- Add the broccoli, bell pepper, and snow peas. Cook for 5 minutes, stirring occasionally.
- Add the green onions and cilantro. Cook for 2 minutes, stirring occasionally.
- Serve and enjoy!
