Ingredients
- 1 tablespoon vegetable oil
- 1 cup chopped onion
- 1 cup chopped bell peppers
- 1 cup chopped mushrooms
- 2 cloves garlic, minced
- 1 (15-ounce) can black beans, drained and rinsed
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 (10-inch) flour tortillas
- 1 cup shredded Mexican-blend cheese
- 1/2 cup salsa
Directions
- Heat oil in a large skillet over medium-high heat. Add onion, bell peppers, mushrooms, and garlic, and cook, stirring often, until vegetables are tender, about 5 minutes.
- Add black beans, cumin, chili powder, oregano, salt, and pepper. Cook, stirring often, until vegetables are tender, about 5 minutes.
- Transfer vegetable mixture to a bowl and allow to cool slightly.
- Preheat oven to 375 degrees F (190 degrees C).
- Lay a tortilla on a work surface. Spread 1/4 of the vegetable mixture over the tortilla. Sprinkle with 1/4 of the cheese. Fold in the sides and then roll up the tortilla.
- Repeat with the remaining tortillas, vegetable mixture, and cheese.
- Place the burritos on a baking sheet. Bake in preheated oven until cheese is melted and tortillas are lightly browned, about 10 minutes.
- Serve with salsa.
