Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup chopped onion
  • 1 cup chopped bell peppers
  • 1 cup chopped mushrooms
  • 2 cloves garlic, minced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 (10-inch) flour tortillas
  • 1 cup shredded Mexican-blend cheese
  • 1/2 cup salsa

Directions

  1. Heat oil in a large skillet over medium-high heat. Add onion, bell peppers, mushrooms, and garlic, and cook, stirring often, until vegetables are tender, about 5 minutes.
  2. Add black beans, cumin, chili powder, oregano, salt, and pepper. Cook, stirring often, until vegetables are tender, about 5 minutes.
  3. Transfer vegetable mixture to a bowl and allow to cool slightly.
  4. Preheat oven to 375 degrees F (190 degrees C).
  5. Lay a tortilla on a work surface. Spread 1/4 of the vegetable mixture over the tortilla. Sprinkle with 1/4 of the cheese. Fold in the sides and then roll up the tortilla.
  6. Repeat with the remaining tortillas, vegetable mixture, and cheese.
  7. Place the burritos on a baking sheet. Bake in preheated oven until cheese is melted and tortillas are lightly browned, about 10 minutes.
  8. Serve with salsa.
