Ingredients
- 1 pound cooked, shredded chicken
- 1 package taco seasoning
- 2 cups shredded cheese
- 1 can black beans, drained and rinsed
- 1 can corn, drained and rinsed
- 1 can diced tomatoes
- 1 package flour tortillas
- Optional: sour cream, guacamole, salsa, and/or jalapeno peppers
Directions
- Preheat oven to 375 degrees Fahrenheit.
- In a large bowl, combine chicken, taco seasoning, cheese, black beans, corn, and diced tomatoes. Mix well.
- Spread a thin layer of the chicken mixture in the bottom of a 9x13 baking dish.
- Cover the chicken mixture with a single layer of tortillas.
- Spread another layer of the chicken mixture over the tortillas.
- Continue layering the tortillas and chicken mixture until the dish is full.
- Bake for 25-30 minutes, or until the top is golden brown.
- Serve with optional toppings such as sour cream, guacamole, salsa, and/or jalapeno peppers.
