Skordalia is a traditional Greek dish made from mashed potatoes, garlic, olive oil, and vinegar. This recipe adds roasted almonds for a unique and nutty flavor. Perfect as a dip or side dish.

Ingredients

  • 4 medium potatoes, peeled and chopped
  • 4 cloves of garlic, minced
  • 1/2 cup roasted almonds, finely chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Directions

  1. Boil the potatoes in salted water until tender, about 15 minutes.
  2. Drain the potatoes and mash them with a fork or potato masher.
  3. In a small pan, heat the olive oil over medium heat and sauté the garlic until fragrant.
  4. Add the roasted almonds to the pan and cook for another 2-3 minutes.
