Ingredients
- 4 cups whole milk
- 1/2 cup sugar

- In a heavy-bottomed pan, bring the milk to a boil over medium heat, stirring occasionally to prevent scorching.
- Once the milk comes to a boil, reduce the heat to low and simmer for 2 hours, stirring occasionally until the milk is reduced to half its original volume.
- Add sugar, chopped nuts, cardamom powder, and saffron strands to the reduced milk, stirring well to combine.
- Continue to simmer the mixture for another 30 minutes, stirring occasionally, until it thickens to a custard-like consistency.
- Remove the pan from the heat and let the mixture cool slightly.
- Pour the kulfi mixture into popsicle molds or small bowls, cover with plastic wrap, and freeze for at least 4 hours or until set.
- To serve, unmold the kulfi by running the molds under warm water for a few seconds and gently removing the kulfi.
