Ingredients
- 1 large cauliflower head, chopped into florets
- 2 large potatoes, peeled and cubed
- 1 medium onion, diced
- 3 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup milk or cream
- 2 tablespoons butter
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Directions
- In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent.
- Add the cauliflower florets, cubed potatoes, dried thyme, dried rosemary, salt, and pepper to the pot. Stir well to combine all the ingredients.
- Pour the vegetable broth into the pot and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 15-20 minutes until the vegetables are tender.
