Ingredients

  • 1 medium buttercup squash
  • 2 tablespoons olive oil
  • 1 small onion, chopped

  • 1/4 teaspoon ground nutmeg
  • 4 cups vegetable broth
  • 1 cup coconut milk

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the buttercup squash in half and remove the seeds. Rub the cut sides with olive oil and place them face down on a baking sheet.
