Ingredients

  • 1 ½ pounds beef, cut into 1-inch cubes
  • 1 large onion, cut into chunks
  • 1 large bell pepper, cut into chunks
  • 2 tomatoes, cut into wedges
  • ¼ cup vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Wooden or metal skewers

Directions

  1. In a large bowl, combine vegetable oil, minced garlic, grated ginger, soy sauce, lemon juice, paprika, cumin, turmeric, salt, and black pepper.
  2. Add the beef cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated beef, onion chunks, bell pepper chunks, and tomato wedges onto the skewers, alternating between ingredients.
  6. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the beef is cooked to your desired level of doneness.
  7. Remove the kabobs from the grill and let them rest for a few minutes before serving.
  8. Serve the Ugandan kabobs hot with a side of rice or salad for a complete meal.
