Ingredients
- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- ½ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- 3 tablespoons ice water
- 2 Granny Smith apples, peeled, cored, and thinly sliced
- 1 cup fresh cranberries
- ¼ cup brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch
- 1 egg, beaten (for egg wash)
- 2 tablespoons turbinado sugar (for sprinkling)
Directions
- In a large bowl, whisk together the flour, granulated sugar, and salt.
- Add the cold butter to the bowl and use a pastry cutter or your hands to cut the butter into the flour mixture until it resembles coarse crumbs.
- Drizzle the ice water over the flour mixture and stir until the dough comes together. If the dough seems too dry, add more ice water, 1 tablespoon at a time.
- Transfer the dough to a lightly floured surface and knead it a few times until it becomes smooth.
- Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- On a lightly floured surface, roll out the chilled dough into a 12-inch circle.
- Transfer the dough to a parchment-lined baking sheet.
- In a large bowl, combine the sliced apples, cranberries, brown sugar, cinnamon, and cornstarch. Toss until the fruit is coated evenly.
- Arrange the fruit mixture in the center of the dough, leaving a 2-inch border around the edges.
- Gently fold the edges of the dough over the fruit, pleating as necessary.
- Brush the edges of the dough with the beaten egg wash and sprinkle with turbinado sugar.
- Bake the tart in the preheated oven for 35-40 minutes, or until the crust is golden brown and the fruit is bubbling.
- Remove the tart from the oven and let it cool for at least 10 minutes before serving.
- Serve warm with whipped cream or vanilla ice cream.
