Ingredients
- 1 cup all-purpose flour
- 1/2 cup packed light brown sugar
- 1/2 cup old-fashioned oats
- 1/2 cup cold butter, cut into pieces
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 8 ounce packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup cranberries, fresh or frozen
Directions
- Preheat oven to 350°F. Grease a 9x13-inch baking dish with butter.
- In a medium bowl, combine the flour, brown sugar, oats, butter, cinnamon, nutmeg, and salt. Use a pastry blender or two forks to cut the butter into the mixture until it resembles coarse crumbs. Set aside.
- In a large bowl, beat the cream cheese and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla.
- Spread the cream cheese mixture into the bottom of the prepared baking dish. Sprinkle the cranberries over the top. Sprinkle the oatmeal crumble over the top.
- Bake for 30-35 minutes, until golden brown. Let cool completely before cutting into bars.
