Ingredients
- 1/4 cup maple syrup
- 1/2 cup walnuts, chopped
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/2 cup blueberries
- 1/2 cup crumbled goat cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions
- Preheat oven to 350 degrees F.
- In a medium bowl, combine maple syrup, walnuts, sunflower seeds, and pumpkin seeds. Mix until combined.
- Spread mixture onto a parchment-lined baking sheet. Bake for 10 minutes, stirring once halfway through, until nuts and seeds are lightly toasted.
- Remove from oven and let cool.
- In a large bowl, combine cooled nut and seed mixture, blueberries, goat cheese, and olive oil. Mix until combined.
- Season with salt and pepper to taste.
- Serve salad chilled or at room temperature.
