Ingredients

  • 1/4 cup maple syrup
  • 1/2 cup walnuts, chopped
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup blueberries
  • 1/2 cup crumbled goat cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine maple syrup, walnuts, sunflower seeds, and pumpkin seeds. Mix until combined.
  3. Spread mixture onto a parchment-lined baking sheet. Bake for 10 minutes, stirring once halfway through, until nuts and seeds are lightly toasted.
  4. Remove from oven and let cool.
  5. In a large bowl, combine cooled nut and seed mixture, blueberries, goat cheese, and olive oil. Mix until combined.
  6. Season with salt and pepper to taste.
  7. Serve salad chilled or at room temperature.
