Ingredients
- 1 cup of wheat bran
- 1 cup of all-purpose flour
- 1/4 cup of white sugar
- 1 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1 teaspoon of ground cinnamon
- 1 cup of applesauce
- 1/4 cup of honey
- 1/4 cup of vegetable oil
- 1 egg
Directions
- Preheat the oven to 375 degrees Fahrenheit.
- Combine the wheat bran, flour, sugar, baking soda, salt, and cinnamon in a large bowl and mix until thoroughly combined.
- In a separate bowl, mix together the applesauce, honey, oil, and egg until blended.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Spoon the batter into greased or paper-lined muffin tins, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until a toothpick inserted into the middle of a muffin comes out clean.
- Cool on a wire rack before serving.
