Ingredients

  • 3 large egg whites
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 2 sticks of butter, softened
  • 1 teaspoon vanilla extract

Directions

  1. In a small saucepan, combine the sugar, water, cream of tartar, and salt and place over medium heat.
  2. Stir the mixture until the sugar is completely dissolved and the syrup begins to boil.
  3. In a stand mixer, whip the egg whites until stiff peaks form.
  4. With the mixer running, slowly pour the syrup into the egg whites and whip until the mixture is thick and glossy, about 5 minutes.
  5. Add the softened butter to the egg white mixture a tablespoon at a time, mixing until fully incorporated.
  6. Add the vanilla extract and mix until combined.
  7. Allow the buttercream to cool completely before using.
