Ingredients
- 3 large egg whites
- 1 cup sugar
- 1/2 cup water
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon salt
- 2 sticks of butter, softened
- 1 teaspoon vanilla extract
Directions
- In a small saucepan, combine the sugar, water, cream of tartar, and salt and place over medium heat.
- Stir the mixture until the sugar is completely dissolved and the syrup begins to boil.
- In a stand mixer, whip the egg whites until stiff peaks form.
- With the mixer running, slowly pour the syrup into the egg whites and whip until the mixture is thick and glossy, about 5 minutes.
- Add the softened butter to the egg white mixture a tablespoon at a time, mixing until fully incorporated.
- Add the vanilla extract and mix until combined.
- Allow the buttercream to cool completely before using.
