Ingredients
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups old-fashioned rolled oats
- 1 cup dried cranberries
- 1/2 cup chopped walnuts (optional)
Directions
- Preheat oven to 375 degrees F.
- In a medium bowl, whisk together the melted butter, brown sugar and granulated sugar until combined.
- Add the egg and vanilla extract and whisk until combined.
- In a separate bowl, stir together the flour, baking soda and salt.
- Add the flour mixture to the wet ingredients and stir until just combined.
- Stir in the oats, cranberries and walnuts (if using).
- Drop by rounded tablespoons onto a parchment-lined baking sheet, about 2 inches apart.
- Bake for 10-12 minutes, or until golden brown.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
