Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, whisk together the melted butter, brown sugar and granulated sugar until combined.
  3. Add the egg and vanilla extract and whisk until combined.
  4. In a separate bowl, stir together the flour, baking soda and salt.
  5. Add the flour mixture to the wet ingredients and stir until just combined.
  6. Stir in the oats, cranberries and walnuts (if using).
  7. Drop by rounded tablespoons onto a parchment-lined baking sheet, about 2 inches apart.
  8. Bake for 10-12 minutes, or until golden brown.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
