Ingredients

  • 1/2 cup butter, melted
  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup caramel baking bits
  • 1/2 cup unsalted peanuts, chopped
  • 1/2 cup popcorn, popped

Directions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and almond extract until combined.
  4. Add the dry ingredients to the wet ingredients, and mix until just combined.
  5. Fold in the caramel baking bits, peanuts, and popcorn.
  6. Drop dough by rounded tablespoons onto parchment-lined baking sheets. Bake for 8-10 minutes, or until golden brown.
  7. Allow cookies to cool on baking sheet for a few minutes before transferring to a wire rack to cool completely.
