2-3 medium yellow squash, sliced into 1/2-inch slices
¼ cup all-purpose flour
2 tablespoons cornmeal
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon cayenne pepper
2 eggs, lightly beaten
3 tablespoons vegetable oil
Directions
In a shallow bowl, combine the flour, cornmeal, salt, pepper, garlic powder, paprika, basil, oregano, and cayenne pepper.
In a separate shallow bowl, lightly beat the eggs.
Dip each piece of squash in the egg mixture, then the flour mixture, coating it evenly.
In a large skillet over medium-high heat, heat the oil. Once the oil is hot, add the coated squash slices in a single layer. Fry for 3-4 minutes, flipping once, until golden brown and crispy.
Transfer to a paper towel-lined plate to absorb excess oil. Serve warm.
