Ingredients
- 2-3 medium yellow squash, sliced into 1/2-inch slices
- ¼ cup all-purpose flour
- 2 tablespoons cornmeal
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried basil
- ½ teaspoon dried oregano
- ¼ teaspoon cayenne pepper
- 2 eggs, lightly beaten
- 3 tablespoons vegetable oil
Directions
- In a shallow bowl, combine the flour, cornmeal, salt, pepper, garlic powder, paprika, basil, oregano, and cayenne pepper.
- In a separate shallow bowl, lightly beat the eggs.
- Dip each piece of squash in the egg mixture, then the flour mixture, coating it evenly.
- In a large skillet over medium-high heat, heat the oil. Once the oil is hot, add the coated squash slices in a single layer. Fry for 3-4 minutes, flipping once, until golden brown and crispy.
- Transfer to a paper towel-lined plate to absorb excess oil. Serve warm.
