Ingredients

  • 2-3 medium yellow squash, sliced into 1/2-inch slices
  • ¼ cup all-purpose flour
  • 2 tablespoons cornmeal
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper
  • 2 eggs, lightly beaten
  • 3 tablespoons vegetable oil

Directions

  1. In a shallow bowl, combine the flour, cornmeal, salt, pepper, garlic powder, paprika, basil, oregano, and cayenne pepper.
  2. In a separate shallow bowl, lightly beat the eggs.
  3. Dip each piece of squash in the egg mixture, then the flour mixture, coating it evenly.
  4. In a large skillet over medium-high heat, heat the oil. Once the oil is hot, add the coated squash slices in a single layer. Fry for 3-4 minutes, flipping once, until golden brown and crispy.
  5. Transfer to a paper towel-lined plate to absorb excess oil. Serve warm.
