Pasta with Chicken Mushroom Cream Sauce

Ingredients

  • 1 lb of boneless, skinless chicken breasts, cut into cubes
  • 1 package of mushrooms, sliced
  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1/2 cup of white wine (or chicken broth)
  • 1/2 cup of heavy cream
  • 1/2 teaspoon of dried oregano
  • Salt and pepper, to taste
  • 1 lb of your favorite pasta
  • 1/4 cup of grated Parmesan cheese (optional)

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken cubes and mushrooms and cook until the chicken is cooked through and the mushrooms are browned, about 8 minutes.
  3. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  4. Pour in the white wine (or chicken broth) and simmer for a few minutes to reduce the liquid.
  5. Add the heavy cream, dried oregano, salt and pepper and simmer until the sauce has thickened, about 10 minutes.
  6. Meanwhile, cook the pasta according to the package directions until al dente.
  7. Drain the pasta and add it to the skillet with the sauce. Toss to combine.
  8. Serve with Parmesan cheese, if desired.
