Ingredients

  • 1 slice of bread
  • 1/2 avocado
  • 1 egg
  • Salt and pepper, to taste

Directions

  1. Toast the bread until golden brown.
  2. Cut the avocado in half and remove the pit.
  3. Scoop the avocado out of the skin and mash it with a fork.
  4. Spread the mashed avocado on the toast.
  5. In a small pot, bring water to a boil and carefully lower the egg into the water.
  6. Cook the egg for 3-4 minutes, or until it is cooked to your desired doneness.
  7. Remove the egg from the water and place it on top of the avocado toast.
  8. Sprinkle with salt and pepper to taste.
  9. Enjoy!
