Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (10.5 ounce) can beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1/2 teaspoon dried oregano
  • 2 tablespoons parsley, minced
  • 1/2 cup heavy cream

Directions

  1. In a large pot, heat the olive oil over medium-high heat. Add the onion and garlic and sauté until the onion is softened and lightly golden, about 4 minutes.
  2. Add the diced tomatoes, beef broth, Worcestershire sauce, salt and pepper, and oregano. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  3. Add the parsley and heavy cream and cook for an additional 5 minutes. Taste and adjust seasoning if necessary.
  4. Serve with a garnish of fresh parsley and crusty bread.
