Ingredients
1 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
2 potatoes, diced
2 cups chicken broth
2 cups corn kernels, fresh or frozen
1 cup half and half
4 strips bacon, cooked and crumbled
Salt and pepper to taste
Directions
Heat the olive oil in a large pot over medium heat.
Add the onion and cook until softened, about 5 minutes.
Add the garlic and cook for 1 minute.
Add the potatoes and chicken broth. Bring to a boil and then reduce to a simmer.
Cook until the potatoes are tender, about 10 minutes.
Add the corn and half and half. Simmer for 5 minutes.

Serve warm.
