Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 potatoes, diced
  • 2 cups chicken broth
  • 2 cups corn kernels, fresh or frozen
  • 1 cup half and half
  • 4 strips bacon, cooked and crumbled
  • Salt and pepper to taste
    • Directions

      1. Heat the olive oil in a large pot over medium heat.
      2. Add the onion and cook until softened, about 5 minutes.
      3. Add the garlic and cook for 1 minute.
      4. Add the potatoes and chicken broth. Bring to a boil and then reduce to a simmer.
      5. Cook until the potatoes are tender, about 10 minutes.
      6. Add the corn and half and half. Simmer for 5 minutes.
      7. Stir in the bacon and season with salt and pepper.
      8. Serve warm.
