Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 potatoes, diced
- 2 cups chicken broth
- 2 cups corn kernels, fresh or frozen
- 1 cup half and half
- 4 strips bacon, cooked and crumbled
- Salt and pepper to taste
- Heat the olive oil in a large pot over medium heat.
- Add the onion and cook until softened, about 5 minutes.
- Add the garlic and cook for 1 minute.
- Add the potatoes and chicken broth. Bring to a boil and then reduce to a simmer.
- Cook until the potatoes are tender, about 10 minutes.
- Add the corn and half and half. Simmer for 5 minutes.
- Stir in the bacon and season with salt and pepper.
