Ingredients
1 ½ cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
½ teaspoon salt
1 cup cold butter, cubed
4 cups fresh peaches, sliced
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract
2 tablespoons butter, melted
1 cup crushed butter cookies
Directions
Preheat oven to 350°F and grease a 9-inch pie dish.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Cut in butter until mixture resembles coarse crumbs.
Press crumb mixture onto bottom and up sides of prepared pie dish.
In a separate bowl, combine peaches, cinnamon, nutmeg, and vanilla extract.
Pour peach mixture into prepared crust.
Mix together melted butter and cookie crumbs and sprinkle over top of peach filling.
Bake for 45-50 minutes, until crust is golden brown and filling is bubbly.
Let cool for 15 minutes before serving.
