Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 1/4 cup ice water
  • 1/2 cup sliced almonds
  • 2 cups fresh apricots, pitted and sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon almond extract

Directions

  1. In a medium bowl, whisk together the flour and salt.
  2. Add the cubed butter and use your fingers to rub it into the flour until the mixture resembles coarse crumbs.
  3. Add the ice water and stir until the mixture comes together.
  4. Turn the dough out onto a lightly floured surface and knead briefly until it comes together. Flatten the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  5. Preheat the oven to 375°F.
  6. Roll the dough out into a 12-inch circle on a lightly floured surface.
  7. Spread the almonds in the center of the dough, leaving a 2-inch border around the edges.
  8. In a medium bowl, combine the apricots, sugar, cinnamon, and almond extract. Mix until the fruit is evenly coated.
  9. Mound the apricot mixture in the center of the dough. Fold the edges of the dough up and over the filling, pleating as you go. Brush the edges of the dough with water.
  10. Bake for 40-45 minutes, or until the crust is golden brown and the fruit is bubbling.
  11. Let cool for at least 15 minutes before slicing and serving.
