Ingredients

  • 3 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon red pepper flakes
  • 3 cups chicken broth
  • 2 cups diced cooked chicken
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup frozen green peas
  • 1/4 cup soy sauce

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  3. Add the ginger, coriander, cumin, turmeric, black pepper, and red pepper flakes. Cook for 1 minute.
  4. Add the chicken broth, chicken, carrots, celery, and peas. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add the soy sauce and cook for another 5 minutes.
  6. Serve hot.
