Ingredients
3 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1/4 teaspoon ground ginger

Directions
Heat the olive oil in a large pot over medium heat.

Add the chicken broth, chicken, carrots, celery, and peas. Bring to a boil, then reduce heat and simmer for 10 minutes.
Add the soy sauce and cook for another 5 minutes.
Serve hot.

This soup can easily be made vegetarian by substituting vegetable broth for the chicken broth and omitting the chicken.
